Blueberry French Toast
Apple Pork Sausage

This recipe is good for 4 large servings.
 I use an 8x8 Pyrex pan.  I line it with parchment paper and let the sides hang over (this is so I can lift it out of the pan with the parchment paper when it is ready to serve.)


Ingredients:
- 3 oz. cream cheese diced
-1 cup blueberries and/or other fruit
-½ cup chopped nuts

1. Put down one layer of bread cubes and scatter a little blueberries and some small cubes of cream cheese.

Put down the a second layer and cover it with: fruit, cream cheese cubes
3. Top it with chopped pecans and pour over the egg/milk mixture.
Egg/milk mixture  
-¼ cup Flour
- 1 ½ -2cup milk 
- 3Tablespoons of sugar
-6 -8 eggs 1 tsp vanilla 
4. Sprinkle 3 tablespoons of sugar mixed with 1 tsp cinnamon on top.
5.Let the casserole sit in refrigerator for up to 24 hours.

Preheat oven to 400 degrees and bake uncovered for 1 hour till golden brown
When it is done, I let it sit for 5 minutes and serve with apple pork sausages.

Blueberry Baked Oatmeal

This Baked Oatmeal Serves 4 - 6

Ingredients:
- 3 tablespoons unsalted butter melted and cooled  (1/2 for the milk and ½ for drizzling)
- 2 cups of milk
- One egg
-2 teaspoons vanilla
-2 cups old fashioned rolled oats
-½ cup pecans, almond, or walnuts toasted and chopped
-1/3 cup sugar
-1 teaspoons baking powder
-1 ½ teaspoons ground cinnamon
-½ teaspoons salt
-2 ripe bananas cut into ½ inch slices
-1 ½ cups berries Maple syrup, for drizzling

1. Preheat oven to 375 degrees Fahrenheit and butter baking dish (one 8 inch square or individuals ramekins)
2. Combine the oats, half the nuts, sugar, baking powder, cinnamon, and salt
3. In a bowl. In another bowl, whisk the milk egg, half the butter and vanilla.
4. Arrange bananas in a single layer on the bottom of the baking dish, sprinkle with 2/3 berries then cover with the oat mixture.
5. Slowly drizzle milk mixture over the oats.  Tap dish to distribute liquid
6. Scatter remaining berries and nuts across the top
7. Bake for 35-40 minutes until the top is nicely golden and the oat mixture has set.  Let cool slightly.  Drizzle with remaining melted butter and maple syrup.
