Ingredients: -3 egg yolks -
¼ cup brown sugar - cooked oatmeal Method: 1. Beat egg yolks and brown sugar in top of double boiler until pale and thick. 2. Place over saucepan of boiling water and whisk until thick, about 4 to 5 minutes 3. Add 1/2 cup of the half and half a little at a time whisking 4. Add the remaining ¼ cup 5. Cool mixture stirring occasionally This mixture can be made up to 24 hours ahead then stored in fridge In the morning: 1. Cook oatmeal for 4 people (I start with very hot water to keep the flakes full. For creamy oatmeal start with cold water) 2. Add ½ of the yolk mixture 3. Fill ramekins with oatmeal/brule mixture and top with the creamy mixture. 4. Leave in the oven at 200 degrees to keep warm in a pan of hot water until ready. I make this 1 hours hour ahead of serving. The top will crust over. Before serving sprinkle brown sugar over the mixture and broil under a hot broiler until the sugar bubbles and caramelizes
Serve with a warm berry mixture on the side.
